Month-by-Month Curriculum

Each month focuses on new skills, new edible plants, and deeper understanding of how to grow, harvest, and continue producing food long term. Participants grow plants they can actually eat, cook with, and propagate for ongoing harvests.

Foundations & Fast-Growing Food

Participants learn how to set up growing systems, start plants, and harvest their first edible crops. This month focuses on plants that grow quickly and build confidence.

  • Green onions (scallions)

    Mineral-Rich Greens & Nutrition Building

    Growth accelerates as participants learn to produce nutrient-dense leafy foods that support overall health.

  • Cilantro
  • Malabar spinach replaces traditional spinach because it thrives in warm indoor conditions and produces continuous edible leaves.

    The final month focuses on creating a self-sustaining indoor food system. Participants learn how to multiply plants and maintain continuous production.
